When the "Fontanella Borghese" opened in the fifties it started as a restaurant with a strong Tuscan tradition, you still can see this from the Florentine and Siena mosaics in the main dining room. During the last 15 years the gastronomic importance of the restaurant increased since the present owners are former pupils of the famous school for chefs in Villa Santa Maria which is located in the Italian province of the Abruzzi.
Our research for ingredients and other products is always thorough and selective. The extra virgin olive oil comes from our own farm, as well as poultry, pork and sheep. For our meat we selected the Chianina D.O.P breed from Tuscany. The game we serve we obtain through collaboration with a biological farm in Tuscany which supplies us wild boar, grey partridge, woodcock, duck, guinea fowl, pigeons and rabbit.
For fish we depend on the seas of Sicily which offers us, scampi, shrimps, "fruits de mer", amberjack, swordfish, sea bream, sea bass and everything else which comes aboard with the catch of the day. Our cuisine rotates with the seasons offering artichokes from Cerveteri, asparagus, beans, peas and of course truffles without forgetting mushrooms and other foodstuffs the land brings us.
