Alberto Ciarla’s restaurant lies on the San Cosimato square, in the old and popular Roman neighbourhood of Trastevere, near the local grocery market.
Ciarla’s creative interpretation of traditional Roman recipes together with his search for rare seafood dishes have led to the unique creations which are served in his restaurant.
Sashimi, marinates and raw Mediterranean fish dishes are fused with the typical Roman cuisine and enriched with local dishes such as Saltimbocca with fillet of Sea Bass, or Spaghetti "Matricina" style with cubelets.
Other revisited traditional recipes are the Zuppa di pasta (Pasta Soup), Fagioli ai Frutti di Mare (Beans with sea food) and Fritto Antico di Molluschi e Gamberi con semolino speziato (Fried Molluscs and Shrimps with semolina and herbs). Alberto Ciarla only uses absolutely fresh high quality ingredients. |
