Sibilla

One of the oldest restaurants in the world, located in the heart of the Medieval citadel of Tivoli, beside the  ancient Roman temples of Sibilla and Vesta.

This historic restaurant actually dates back to 1730 and has a fabulous terrace garden  with a breathtaking view overlooking the park of Villa Gregoriana.  A large centuries-old wisteria tree covers the restaurant structure with cascading blankets of colour during the blooming season: definitively a unique charming spot where you can relax in a timeless atmosphere and enjoy an unforgettable culinary experience.

Sibilla has a long tradition of fine “family” cuisine  at a fair price and this, combined with its beautiful location, make  the place worth a visit.

Franco Perna, Sibilla’s chef since 1998, has now a new collaborator, Mirko Moglioni, who has a remarkable CV:  before landing at Sibilla’s, Mirko has worked in various prestigious restaurants such as Il Buco (New York), the Ketumbar, L’Antico Arco and Il Ceppo  (all three in Rome); he has also collaborated with Il Ceppo to provide gastronomic consultancy to the Prince Hotel chain in Japan.

Your culinary experience at Sibilla’s will start with a selection of breads, pizzas, focacce and grissini, all rigorously made by hand, accompanied by a variety of salumi (cured meats) from the Lazio region, among which the delicious smoked ham from Campocatino and raw ham from Bassiano and Mangalitza.

All dishes are prepared with carefully selected organic and biodynamic produce from local farmers.
