Summery Unagi (Eel) Specialities at Teppanyaki Restaurant Sazanka

From 27 up to and including 30 July Hotel Okura Amsterdam’s Teppanyaki Restaurant Sazanka will
be serving unagi (eel) specialities.

During this period Executive Chef Nonaka will be preparing
various eel dishes in order to introduce his guests to traditional Japanese ways of consuming eel.
One of these dishes, for example, consists of a roll of thinly sliced sirloin filled with Dutch eel and
miso sauce. This method of preparation was developed at the Sazanka Restaurant and has gained
tremendous popularity among the restaurant’s regular guests.

During the hot summer months, the Japanese take extra health precautions. There are various
traditional Japanese ways of preventing a summer burnout, one of which is eating eel. The large
quantities of proteins in the eel are an excellent source of energy, which helps people resist the heat.
The word “teppanyaki” means “grilled on a plate”. Meat, fish, shellfish and vegetables are grilled on
a hot metal plate right in front of the guests. This tradition goes back to the middle of last century.

Our traditional Yamazato Restaurant will also be serving unagi specialities from 27 up to and
including 30 July. At this restaurant, the eel is prepared in a traditional fashion: it is filleted via its
back and then grilled over extremely hot bincho charcoal, which is made of oak and produces no
smoke.

In addition to its two Japanese restaurants, Hotel Okura Amsterdam also has the French Ciel Bleu
Restaurant, Le Camelia Brasserie and two bars.
